Sous Chef (5-day work)

Overall Responsibilities:
Assist the Executive Sous Chef with the planning, preparation and execution of Western & Chinese Hospitality menus including daily set lunches, dinners and cocktail party events. Acting as the executive chef’s second-in-command, overseeing day to day operations, ordering and the impeccable delivery of five star hospitality.


Responsibilities

  • Ensure the menus are planned carefully and thoughtfully, with a focus on seasonality, premium ingredients and provenance
  • Maintain high standards of food safety and kitchen hygiene at all times, showing a passion and pride for the workplace
  • Monitor closely the quality of incoming ingredients to ensure they met the exacting standards
  • Liaise closely with procurement regarding suppliers, menu costings, and deliveries
  • Ensure balanced cost control with premium ingredients through menu planning, good storage and ordering practices, portion controls and minimizing wastage – drive profitability through good and consistent process
  • Drive profitability through process
  • Assist Executive Chef in overseeing the day-to-day operation of the kitchen
  • Work closely with the client to develop and deliver interesting & innovative menus, as to their requirements
  • Attend daily briefings with operations team to ensure clear communication on event orders and function arrangements
  • Work closely with the front of house/ service team to ensure service excellence, timing and overall efficiency of operation
  • Assist in supervising other kitchen staff as required
  • Support the overall catering operation in other areas as business demands

Requirements

  • Certificate in recognized food handling/ sanitation institution is highly preferred
  • Minimum 3 years in similar roles working across 5-star hotels or premium F&B establishments
  • A minimum of 2-year cooking in fine dining kitchens is essential for this role 
  • Proactive and always looking for improvements
  • Excellent communication skills to both internal colleagues and external clients
  • Team player with a positive, can do attitude
  • Sound knowledge of global cuisines, ingredients, suppliers and current market trends
  • Impeccable standards of food safety & hygiene
  • Creative and excellent plating skills – please note a tasting will be required as part of the interview process
  • Very flexible and able to adapt to changing environments and management demands. Able to cope with pressure
  • Able to speak in Cantonese & English
